Simple Fish and Shrimp Tacos - Cooking for One or Two

Crispy taco shells
Baked Fish or shrimp
Sour cream
Lettuce and tomato


Bake and season fish or shrimp as desired. Fill bottom of taco shell with fish, shrimp (or combination of both). Layer diced tomato and shredded lettuce on top. Lastly, dollop with sour cream and enjoy!

Optional toppings
Guacamole
Shredded cheese
Sliced peppers

Red onion

Italian Chopped Salad for Two - Cooking for One or Two

Play around with amounts and ingredients in this salad to make it your own!
Course: Main Course, Salad
Servings: 2 people

Total Time: 15 mins


Dressing
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 small clove minced garlic
1 teaspoon minced shallot
1/2 teaspoon dried Italian seasoning
3 tablespoons extra virgin olive oil
Salt and freshly ground black pepper

In a medium bowl, whisk together vinegar, mustard, garlic, shallot and Italian seasoning. Slowly drizzle in olive oil, whisking constantly. Season to taste with salt and freshly ground black pepper.

Salad
1 15 ounce can Cannellini beans drained (or 1 1/2 cups home cooked)
1 head romaine lettuce chopped
2 ounces Pecorino Romano or provolone cheese diced small
3 ounces salami sliced into thin ribbons
6 oil packed sun dried tomatoes coarsely chopped
12 Kalamata olive pitted and coarsely chopped

Place Cannellini beans in a large salad bowl. Add dressing and gently stir to combine. Let stand 10 minutes. Add chopped romaine to beans and toss gently to incorporate beans and coat lettuce with dressing. Sprinkle remaining ingredients over and serve.

Hot German Potato Salad - Cooking for One or Two

 2 medium potatoes                
3 slices bacon                   
1/3 cup chopped onion        
1 Tablespoon flour                           
2 to 3 teaspoons sugar                     
3 Tablespoons vinegar
3/4 teaspoon salt
1/4 teaspoon celery seeds
1/3 cup water
Dash of pepper


Boil potatoes in their jackets.  Peel and slice thinly.  Fry bacon slowly in skillet.
Drain on paper towels; crumble. Saute onion in bacon fat until golden.  Blend in
flour and seasonings.  Cook over low heat, stirring until smooth & bubbly.  Remove
from heat.  Stir in water and vinegar.  Bring to boil, stirring constantly.  Boil 1 min.
Fold in potatoes and bacon carefully.  Remove from heat; cover and let stand until

ready to serve.   2 generous servings.

Hot Cheese Puffs - Cooking for One or Two

3 slices of bread         
2 egg whites                
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon paprika
1 cup grated Cheddar or Swiss (I used cheddar)

Cut each slice of bread into thirds or quarters.  Toast bread on one side only under broiler.  Beat
egg whites until stiff.  Fold in rest ingredients; spread 1/4" thick on untoasted side of bread.
Broil until browned about 5 minutes.  2 servings.

Easy Chocolate Croissants - Cooking for One or Two

1 refrigerated crescent roll from an 8-count tube
10 semisweet chocolate chips or chopped semisweet chocolate
1 chopped pecan or walnut if desired

Glaze
2 T. powdered sugar
scant teaspoon milk
scant teaspoon vanilla
Serve warm or at room temperature.



Heat toaster oven to 375° F.
Unroll the dough and take out 1 triangle, store the rest in plastic wrap and use within a week.
Place about 10 chocolate chips on the bottom third of the triangle and roll the dough up around the chocolate.
Transfer the croissant to a baking sheet (lined with parchment paper, if desired, for easier cleanup). Bake until golden brown, 12 to 14 minutes.
To make glaze, mix all ingredients and drizzle over croissant.


Chocolate Chip Cookies for Two - Cooking for One or Two

2 T butter soft
2 T brown sugar
1 T sugar
1/4 t vanilla
1 egg yolk
1/4 t baking soda
1/4 t salt
6 T flour
1/4 c chocolate chips

Blend butter, brown sugar, and white sugar. Add yolk, vanilla. Mix. Add soda, salt, flour and stir. Add chocolate chips and blend gently. Form into whatever size cookies you want. Large or small. Bake at 350 F; 8-9 minutes for small cookies or 10-12 minutes for large cookies.

Apple Crisp for Two - Cooking for One or Two

1 large tart apple; peeled and sliced 
1 Tablespoon lemon juice 
2 Tablespoons brown sugar 
2 Tablespoons quick-cooking oats 
2 Tablespoons butter, melted 
Dash of ground cinnamon 
Whipped cream or vanilla ice cream (optional)


Place apples in an ungreased, 2 cup baking dish; sprinkle with lemon juice. Combine the brown sugar, oats, butter and cinnamon; sprinkle over apples. Cover and bake at 350 F for 30 minutes. Uncover and bake 5 minutes longer, or until apples are tender. Serve with whipped cream or ice cream if desired.
Yeild: 2 servings.
