Keto Jalapeno Poppers - Hors d' Oeuvres

 

5 bacon slices (can substitute bacon bits)

6 jalapeno peppers

3 ounces cream cheese, softened

¼ cup shredded cheddar cheese

¼ teaspoon garlic powder


In a skillet over medium, fry the bacon until crispy. Set aside on a paper towel-lined plate to cool. When cool enough to handle, chop or break bacon into bits. 

Preheat the oven to 400 F. Line a rimmed baking sheet with parchment paper. 

Slice the jalapeno peppers in half lengthwise (if you wish to remove stems, do so at this point). Scrape insides out of each pepper (for spicier option, add seeds to cheesy sauce).

In a medium-sized bowl, use a fork to combine the cream cheese, garlic powder, and bacon bits. Spoon some of the mixture into each jalapeno half and set the peppers cheese-side-up on the lined baking sheet. Bake for 18 to 20 minutes, until the cheese is melted and slightly crispy on top.

The Dagwood - Sandwiches





Large piece of bread, cut into three layers

Sliced ham

4 slices bacon, cooked

1 fried egg

Thinly sliced pickles 

Thinly sliced jalapenos Mayonnaise, mustard to taste

Sliced tomatoes

Sliced cheese of your choice 

Cole slaw 




Butter top and bottom of each of the three slices of bread. Layer ham, bacon, pickles, jalapenos, mayo, mustard and cheese. Bake at 350 F for 15 minutes. Add fried eggs, tomatoes and Cole slaw. Put on the top layer of bread and enjoy. 



Bacon on a Bagel - Sandwiches

1 bagel, cut in half and lightly toasted 
2 Tablespoons cream cheese, softened
4 (or more) slices bacon, crisply fried

Spread cream cheese generously on the cut side of each bagel half. Pile bacon on top and enjoy.

Homemade BBQ Sauce - BBQ Picnic

½ cup ketchup 
½ cup brown sugar 
2 Tablespoons honey
¼ cup apple cider vinegar
¼ teaspoon chili powder 
¼ teaspoon cumin 
¼ teaspoon black pepper 
1 Tablespoon minced onion 

Add all ingredients together in a saucepan and heat to boil until thickened. 
If desired, add 

1-2 Tablespoon minced jalapeno 
1 teaspoon crushed red pepper or hotter pepper

½ cup mince pineapple or mango

BBQ Dry Rub - BBQ Picnic

¾ cup dark brown sugar
2 tsp. chili powder
2 tsp. paprika
1 ½ tsp. black pepper  ( I use 1 tsp. white pepper)
1 tsp. dry mustard
1 tsp. onion powder
1 tsp. salt
¼ tsp. cayenne pepper

Rub over meat and refrigerate for about an hour. Then cook (oven, grill or how you prefer)

Meatloaf - Eggs & Peeps

1 ½ pound ground beef
½ pound sausage 
2 eggs
1 cup bread crumbs 
½ cup chicken broth
1 Tablespoon mustard 
1 Tablespoon black pepper (less if desired)
1 Tablespoon paprika 
1 Tablespoon beef broth
1 package beef gravy mix 
½ cup diced tomatoes



Preheat the oven to 400 F. Mix all ingredients well and put in a baking dish. Bake at 400 F for 45 minutes or until meat mixture is thoroughly cooked.

Roasted Pork Tacos with Avocado and Salsa Verde - Intimate Recipes

1 cup pork, shredded 
1 Tablespoon olive oil 
1 garlic clove, minced 
½ cup green cabbage, shredded 
½ cup avocado, sliced 
2 Tablespoons cilantro, chopped 
¼ cup salsa Verde 
3 (6-inch) soft corn tortillas
½ lime




Place the tortillas in the microwave and cook on high for 15 seconds, so that they are warmed through. Remove from the microwave and set aside. 
Place the olive oil and garlic in a frying pan and cook over medium heat until garlic begins  to soften. Add the pork and cook until heated through. 
When pork is cooked, divide the contents of the frying pan between the three tortillas. Top with the  green cabbage, avocado, salsa verde and cilantro. Squeeze lime juice over each taco and serve.

Chicken Pot Pie - Grandma's Recipes

1 cup chicken, cooked and cubed 
1 can cream of  chicken soup 
1 package grand biscuits 
Vegetables of your choice, chopped 
½ onion, chopped
Pepper, paprika and garlic to taste




Line greased 8x8 inch  pan with biscuits. Mix chicken, soup and vegetables. Mix in onion and spices. Pour over biscuits in a pan and top with additional biscuits. Bake according to biscuit package directions or until bubbly and golden on top.

Sausage and Rice Casserole in a Mug - Mix Now, Make Later

Dry ingredients...
1/2 cup instant rice
2 tablespoons Knorr classic white sauce mix
1 teaspoon dried red bell pepper
1/2 teaspoon dried onion flakes
1 teaspoon dried chives
1 teaspoon chicken bouillon

In a small bowl, combine the above ingredients. mix well and place in a sandwich size zip-top bag and seal. Place a sealed bag in a mug with a volume of at least 1 1/2 cups.

Decorate and attach following directions:
What to add...
Sausage and Rice Casserole Mix
3 tablespoons milk
1/2 cup water
1/3 cup sausage, cooked and crumbled.
Directions...
Place Sausage and Rice Casserole Mix from bag in mug.
In a small saucepan over medium heat, combine milk and water. Bring to a boil and pour over ingredients in a mug. Loosely cover with aluminum foil and let sit for 5 to 7 minutes.
Meanwhile, prepare sausage and drain off fat. Stir cooked and crumbled sausage into rice mixture.

Spanish Mac and Cheese - Southern Comfort Food

1 Tablespoon olive oil
1 pound ground sirloin 
1 Tablespoon smoked paprika
3 teaspoons salt, divided 
½ teaspoon ground cumin 
½ teaspoon ground black pepper 
1 medium Spanish onion, thinly sliced 
1 large red bell pepper, seeded and thinly sliced 
4 cloves garlic, thinly sliced 
2 Tablespoons all-purpose flour 
2 cups whole milk 
1 (14.5 ounce) can diced tomatoes, drained
3 cups shredded Manchego cheese
1 (16 ounce) package elbow macaroni, cooked according to package
1 Tablespoon chopped fresh oregano 

In large cast iron Dutch oven, heat oil over medium-high heat. Add beef, paprika, 1 ½ teaspoon salt, cumin and pepper. Cook until beef is brown and crumbly; about 5 minutes. Remove beef using a slotted spoon, reserving drippings in pot and let beef drain on paper towels. Add onion, bell pepper and garlic to pot. Cook until tender. Stir in flour and remaining salt. Cook for 1 minute and whisk until smooth. Stir in tomatoes and bring to a simmer. Reduce heat to medium and cook for 3 minutes. Gradually stir in cheese until melted. Stir in beef, pasta and oregano. Garnish as desired. 

Garnish: sliced green olives, chopped fresh oregano, shredded Manchego cheese, smoked paprika

Okra-and-Corn Maque Choux - Southern Comfort Food

¼ pound spicy smoked sausage, diced 
½ cup sweet onion, chopped 
½ cup green bell pepper, chopped 
2 garlic cloves, minced 
3 cups fresh corn kernels 
1 cup fresh sliced okra
1 cup diced tomatoes, peeled and seeded
Salt and freshly ground pepper to taste




Saute sausage over medium-high heat until browned. Add onion, bell pepper and garlic and saute for 5 minutes. Add corn, okra and tomato and cook, stirring often for 10 minutes. Season with salt and pepper.

German Egg Rolls - Asian fare

1 lb Goetta
1 (8 ounce) package cream cheese 
2 cups sauerkraut, drained 
1 ½ scallion, finely chopped 
Egg roll wraps 

(Pictured to the right)

Cook and crumble Goetta, drain off grease. Saute scallions then add cream cheese to soften. Add sauerkraut and Goetta and mix (can add 1 cup Swiss cheese if desired). Put ½ cup of mix on each roll wrap and seal with water. Fry in oil.

Keto Ranch Chicken - Bird Food

4 chicken breasts
1 cup chicken bone broth
2 tsp dried onion
1 tsp onion powder
2 tsp garlic powder
1 tsp paprika
2 tsp dill
1 1/2 tsp parsley
Himalayan salt
Pepper
6 strips of bacon
8 oz of cream cheese


Put bone broth and chicken breasts in a baking dish.
Divide cream cheese and slather on chicken.
Mix all spices together, then sprinkle spice mixture on chicken.
Cover pan and bake at 375 for 30 minutes (or prepare in the crock pot).
Cook bacon and reserve the grease.
Chop the bacon.
When chicken is done, shred it and stir in bacon grease.
Serve over spinach and top with bacon.

Pepper Ham Bread & Chocolate Bread - Family Favorites

1 loaf frozen bread dough
Mrs. Dash seasoning
Ham, chopped into bite size pieces
Shredded cheese (of your choice)


Defrost dough and roll out to ½ inch thick. Sprinkle seasoning over rolled dough. Sprinkle on ham and cheese of your choice. Roll dough up and place in buttered loaf pan. Let rise for 1 to 2 hours and bake at 350 degree oven for 40 minutes or until dough is cooked through.

Top picture features the ham and cheese version. The bottom picture features a chocolate variation using cocoa powder and butter on the bread.

Big Ol’ Mess - Family Favorites

1 lb smoked sausage, cut into chunks
3 jalapeno peppers, sliced
1 green pepper, cut into bite-sized chunks
1 sweet onion, cut into bite-sized chunks
¼ cup Tabasco sauce
1 10 ounce jar sweet and sour sauce
1 foil cooking bag




Place sausage, peppers and onion in foil bag. In small bowl, mix Tabasco sauce with sweet and sour sauce and pour into foil bag; seal edges tightly. Place foil bag on grill and cook about 45 minutes; turn bag once every 15 minutes. Set open and serve right from foil bag. Makes 6-8 appetizer servings or 4 main course servings.


This is great as an appetizer or main dish. To serve, use skewers or load onto chunks of crusty bread.

Pierogis and Ham

1 Tablespoon olive oil 
1 red bell pepper, chopped 
½ yellow onion, chopped
1 package fully cooked ham steaks (2 steaks), chopped
1-2 packages Mrs. T's frozen pierogis, any variety



Heat oil in large skillet and add bell pepper and onion. Cook over medium high heat for 5-7 minutes until just cooked. Add chopped ham. Cook an additional 10-15 minutes until ham is heated through. Add pierogis. Continue cooking until pierogis are heated through and golden brown. Serve immediately. 

This easy meal can use a variety of vegetables; carrots, celery, broccoli, cauliflower, peppers, etc. Also season with salt and pepper as desired. These  are perfect for a busy night.


Catlin Chili

This recipe is great for busy days in the winter or fall. It makes enough to have a few leftovers and my husband and I ate it right up. Slice some fresh bread to go along with the chili.

1 package ground Italian sausage
1 onion, chopped
2 bell peppers, chopped
1 can fire roasted diced tomatoes
1 can kidney beans
1 can hot chili beans
1 can green chilies
Dash of hot sauce
1 Tablespoon brown sugar
1 Tablespoon chili powder
1 teaspoon cayenne pepper
1 Tablespoon minced garlic
1 Tablespoon ground cumin seed

In skillet, cook onions with Italian sausage until onions are translucent and sausage is browned. Line slow cooker and place sausage and onions in bottom. Add remaining ingredients and stir to combine. Set crock pot to low and cook.

Arroz Atollado - Latinos Platos

1 cup extra-virgin olive oil 
6 scallions, finely chopped 
5 cloves garlic, finely minced 
2 large ripe tomatoes, finely chopped 
3 Tablespoons finely chopped chipotle in adobo
5 sprigs fresh cilantro
Fine  sea salt and freshly ground black pepper to taste
½ teaspoon ground cumin, plus more for seasoning
3 pounds pork ribs, cut into 1 ½ inch pieces
5 cups dry long-grain rice (preferably Carolina brand)
2 cups frozen or fresh peas
3 medium carrots, minced



Heat the olive oil in a 7 quart pot over medium heat. When hot, add the scallions and garlic and saute until fragrant; about 5 minutes. Add the tomatoes and chipotle in adobo and cook for 3 minutes. Chop up 4 of the cilantro sprigs, add to the pot and cook for another 2 to 3 minutes.
Stir in ½ Tablespoon salt, ½ Tablespoon pepper and the  cumin. Add the pork ribs and brown on all sides; 5-7 minutes. Stir in 10 cups water. Add the rice, peas, and carrots; stir again. Drop in the remaining cilantro sprig.
Cook, covered, over medium heat until most of the water has been absorbed and the rice grains have opened, about 60 minutes. Turn off the heat and leave covered for 10 minutes.


Taste broth and season with more salt, cumin and black pepper if necessary.

Prepare this with beef, chicken, chorizo or any combination of the three.

Stuffed Celery - Late Night Snacks

Cream cheese
sour cream
celery
shredded carrots
capers
crumbed bacon


Mix the cream cheese, sour cream, carrots, and capers. Spread into middle of celery slices. Sprinkle crumbled bacon on top and enjoy!
