Kielbasa Skillet Hash

I originally found this recipe on allrecipes and was looking for something cheap, quick and easy. This was it. I prepared it in under 30 minutes. It uses many ingredients that are in season during August in Ohio. Including onions, broccoli and potatoes.  I didn't have broccoli, so my version became a 5 ingredients or less meal too!

Olive oil (to coat skillet)
1 sweet onion, chopped
8 small potatoes (or 4 large), chopped into small bits
1 package kielbasa, sliced
Salt/pepper to taste

Optional ingredients
1/2 cup Italian dressing
1/4 cup white or red wine
Ranch dressing mix

Heat a large skillet with olive oil over medium heat. Add potatoes and onion. Sprinkle with salt and pepper to taste. Meanwhile, slice kielbasa and add it to the skillet. Simmer for 10-15 minutes, or until potatoes are cooked through and onions are translucent. Sausage should be browned. Toss to combine with any add in sauce, and serve in bowls.

Morning Glory Muffins - Apples Delicious

2 ¼ cups all purpose flour
1 ¼ cups granulated sugar
1 Tablespoon ground cinnamon
1 teaspoon baking soda
¾ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups carrots, grated
⅔ cup canned crushed pineapple, drained
½ cup shredded sweetened coconut
1 large, firm sweet apple; unpeeled, cored and grated
½ cup roughly chopped walnuts
3 large eggs
¾ cup vegetable oil, such as corn or canola
1 teaspoon vanilla extract



Preheat oven to 350 F and set rack to the middle position. Line the muffin cups with paper liners or grease with butter. In large bowl, whisk together the flour, sugar, cinnamon, baking powder, baking soda and salt. Add the carrots, pineapple, coconut, apple, and walnuts; stir to combine. Add the eggs, oil and vanilla. Stir to blend.

Divide the batter among 15 muffin cups, filling each ⅔ of the way to the top. Bake until the muffins are puffed and golden and a toothpick comes out clean; about 25 minutes. Let the muffins cool in the pan on a rack for 10 minutes, then turn them out to cool for another 10 minutes; serve warm.

Recipe Notes

The Morning Glory Cafe was a famous Nantucket Island gathering spot in the 1970’s & 1980’s. It was there that chef/owner Pat McKinstry introduced the muffins that would immortalize her restaurant. Gourmet magazine printed the recipe in 1981 and they began appearing at bakeries and cafes around the country. Packed as they are with apples, walnuts, coconut, pineapple, and carrots, they’re like a healthy wake-up call for your taste buds.

Any sweet apple will work well with this recipe. This recipe also works well if you prep the batter the night before and then finish it in the morning. You can also freeze the finished muffins in a zip lock bag up to 2 months.

My Favorite Apple Cake - Apples Delicious

1 ¼ Cup cooking oil
2 Cups Sugar
3 Eggs beaten
3 Cups Flour
1 Tsp salt
1 Tsp Soda
3 Cups Raw Chopped Apples
1 Tsp Vanilla
1 ½ Cups Pecans


Combine all ingredients (no mixer required) Spray bunt pan and

My favorite apple cake recipe is from a church cookbook that did not give a clue that it was from, but it is really delicious and easy!

Homemade Apple Butter - Apples Delicious

8 Cups Apple Sauce
4 Cups Sugar
2-4 Tbs Cinnamon
½ cup red hots
1 or 2 Cinnamon Sticks


Start with about 15 pounds of apples (I use a mix of Gala and Courtland apples)

Cook apples in a small amount of water until soft. Do not peel. Core the apples, cool them and puree in blender or food processor. Mix additional ingredients and cook until thick. Put into jars and seal.

Cinnamon Sugar Apple Chips - Apple Delicious

Canola oil cooking spray
2 tablespoons sugar
1 teaspoon ground cinnamon
2 apples, cored, thinly sliced

Heat oven to 200°F. Line cookie sheet with cooking parchment paper; spray paper with cooking spray. In small bowl, mix sugar and cinnamon. Place apple slices on cookie sheet. Spray apples with cooking spray; sprinkle evenly with sugar-cinnamon.  Bake 2 hours, rotating cookie sheet after 1 hour. After 1 hour 30 minutes, check apples every 10 minutes to avoid burning. Store in airtight container.

Caramel Apple Salad - Apples Delicious

3 lbs Granny Smith apples diced
8 oz. cream cheese
8 oz cool whip
1 pkg fun size snickers



Dice apples. Cream together cream cheese and cool whip. Add apples to mix. Blend in  chopped snickers.


Baked Apple Roses - Apples Delicious

1 large apple, cored and sliced  
¼ cup sugar       
1 teaspoon cinnamon
¼ cup melted butter                      
1 egg                    
2 teaspoons water
1 frozen puff pastry, thawed, or crescent roll dough
Confectioner’s sugar optional


Preheat oven to 400 F.  Dust ramekins, or muffin tins, with sugar. Slice the apple very thin and microwave 45 seconds, until tender.  Cover with paper towel. Mix cinnamon and sugar.  Mix egg and water together in a separate container.
If using crescent roll dough, separate each triangle and pinch long ends together.  Then cut into long strips.  If using frozen puff pastry, thaw completely, and cut into long strips.
Arrange slices of apple, curved side over the edge by 1/4 inch, flat side not quite flush with the other side; overlap slightly.  Fold the pastry over the slices’ flat edge.  Brush the egg wash over the pastry fold, sprinkle lightly with cinnamon sugar.  Roll up, and place into ramekins.  Optional to sprinkle more sugar on the ‘petals’ formed after rolling.

Bake 45 minutes, cool 5-10 minutes.

Awesome Country Apple Fritter Bread - Apples Delicious

1/3 cup light brown sugar
1 teaspoon ground cinnamon
2/3 cup white sugar
1/2 cup butter, softened
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk or almond milk
2 apples, peeled and chopped (any kind), mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- (depending on thickness of glaze wanted)

Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing. Mix brown sugar and cinnamon together in a bowl. Set aside. In another medium-sized bowl, beat white sugar and butter together using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, until blended in; add in vanilla extract. Combine & whisk flour and baking powder together in another bowl and add into creamed butter mixture and stir until blended. Mix milk into batter until smooth. Pour half the batter into the prepared loaf pan; add half the apple mixture, then half the brown sugar/cinnamon mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture. Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes. To make glaze, mix powdered sugar and milk or cream together until well mixed. Let cool for about 15 minutes before drizzling with glaze.

Baking options: Bake 30-40 min. for 2 loaf recipe, 15-20 minutes for muffins or 50 -60 minutes for one full loaf recipe or until toothpick inserted in center comes out clean.
Fluffy, buttery, white cake loaf loaded with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top. Simply Irresistible! Serves 8.

Autumn Pork Stir-Up - Apples Delicious

1 pound Pork Tenderloin, cubed (can use chicken tenderloins)
1 onion, sliced in wedges
2 bell peppers, cut into strips
3 Tablespoons teriyaki sauce
1 cup apple juice (combine this with the teriyaki to taste)
Salt, pepper to taste                                      
1 teaspoon of fresh ground ginger, to taste or optional
1 Tablespoon fresh, jarred, or dried minced garlic, add more to taste
1 large granny smith apple, or other very firm type, cored and sliced (peeled optional)
2 tablespoons frying oil (like olive oil or cooking spray)

Combine chopped onion, pepper, the apple juice, teriyaki, and spices.  Add Pork Tenderloin cubes and water to cover.  Marinate 2-6. Discard marinade; warm oil in a skillet. Drain marinade off pork and cook pork in skillet until desired – or 165 F and lightly brown.  The peppers and onion will be soft.  Add the apple for 5 minutes or until warm and tender. Serve in a crusty bread bowl or next to plain rice.

Apple Pizza - Apples Delicious

Shaved coconut

Caramel drizzle



Slice apples and lay in single layer. Spread peanut butter on apple slices. Sprinkle cranberries, blueberries and shaved coconut over apples and peanut butter. Enjoy!
