2 Ingredient Pineapple Angel Food Cake - Late Night Snacks

1 box (1 step) angel food cake mix (such as Betty Crocker)
1 large can (about 20 ounces) crushed pineapple, undrained

Preheat oven to 350 degrees F. In a large bowl, stir together the dry cake and the entire can of crushed pineapple with its juice. Stir well until all the dry mix is incorporated. (the mixture will get very foamy)

Pour the batter into a 9x13 pan which has been lightly greased with nonstick cooking spray. Bake at 350 F degrees for time specified on the box for pan size. When sides pull away from pan and toothpick inserted in center comes out clean, the cake is done (about 30-40 minutes). Remove from oven and place on wire rack to cool.



Walking Tacos - Late Night Snacks

Individual bags of Fritos
Cooked ground beef with taco seasoning
Lettuce, onion and tomato, all chopped
Shredded Cheese


Garnishes sour cream, jalapenos


Open bag of Fritos and add meat to bag. Add toppings to individual preference.

Stuffed Celery - Late Night Snacks

Cream cheese
sour cream
celery
shredded carrots
capers
crumbed bacon


Mix the cream cheese, sour cream, carrots, and capers. Spread into middle of celery slices. Sprinkle crumbled bacon on top and enjoy!

Microwave Chex Mix - Late Night Snacks

1 stick butter  (1/2 cup)
2 tsp seasoned salt
3 t Worcestershire sauce
8 cups assorted chex cereal
1 cup mixed nuts (optional)


Place butter, seasoned salt, and whisker sauce in a large microwave safe bowl.  Heat until just melted.
Add nuts, stir.
Add cereal, stir  
Microwave for 2 minutes, stir.
Microwave 2 minutes more, stir.  
Microwave a final 2 minutes, stir and eat!  


Will be soft until it cools and then will be nice and crunchy.

Leftover Rice Pudding - Late Night Snacks

¾ cup rice
½ cup water
¼ cup sweetened condensed milk
2 Tbs raisins


Heat skillet with water and rice until the water is absorbed. Add condensed milk and raisins. Sprinkle with cinnamon or nutmeg as desired.

Heavenly Herb Dip with Pita Chips - Late Night Snacks

1 cucumber, coarsely chopped
1 red onion, chopped
2 4-oz containers crumbled feta cheese
1 Tablespoon olive oil
2 ½ Tablespoons lemon juice
3 Tablespoons fresh dill
3 Tablespoons fresh mind


Garnishes: fresh mint leaves, lemon wedges


Combine cucumber, onion and cheese in medium bowl. Sprinkle with oil, juice and herbs. Toss to mix and garnish as desired. Serve with pita chips. Makes 6 servings.

Fast Blue Cheese Ranch Dip - Late Night Snacks

Ranch dressing
Sour cream
Blue cheese


Mix ranch and sour cream together and add crumbled blue cheese. Serve with vegetables or crackers for dipping. Enjoy!

Easy Pickles in a Blanket - Late Night Snacks

12 slices of Italian salami (sliced thin)
½ cup cream cheese (whipped is easier to work with)
12 mini gherkins, drained (pick the longest pickles from the jar or use 2 pickles per roll)
Toothpicks - as many as needed


Spread each slice of the salami with a thin layer of cream cheese to within ¼ inch of the edges. Place 1 or 2 pickles in the center of the salami, then roll up jelly-roll style.


Optional: slice each roll into thirds or in half then pierce each piece with a toothpick. Place on  serving platter and refrigerate until ready to serve.

Crab Dip - Late Night Snacks

1 pkg cream cheese
1 small tub crab dip
1 jar Old English Cheese spread
1 Hard boiled egg, minced
1 small package lump crab or imitation crab
1 minced small onion or shallot
¾ cup shredded cheese


Mix together cream cheese, crab dip and old English spread. Add all remaining ingredients and place in oven safe dish. Bake at 400 F for 20 minutes.


Also great for Cheese ball, stuffing for to make  crab rangoon.

Chicken Parmesan Sliders - Late Night Snacks

1 Rotisserie chicken (can use shredded cooked chicken breast)
12 slider buns or dinner rolls
1 ½ cups mozzarella cheese
2 Tablespoons parmesan cheese, grated
1 jar marinara sauce
1 Tablespoon butter
½ cup parmesan cheese


Preheat oven to 350 F. Layer bottom of a baking dish with the bottom half of the buns or sliced dinner rolls. Layer with shredded chicken, marinara sauce and cheese. Top with the other half of the buns or sliced dinner rolls. Brush the tops of the buns with melted butter and sprinkle with grated parmesan cheese. Cover the dish with foil and bake for about 10 minutes. Remove the foil and bake for another 5 minutes until slightly brown on top. Enjoy!

Banana Bread Brownies - Late Night Snacks

1-1/2 c. sugar
1 c. sour cream
1/2 c. butter, softened
2 eggs
1-3/4 cups (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)

For brown butter frosting...
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk


Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.


Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.


Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.


Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).
