Lemon Curd - Breakfast for Dinner

Zest of 4 lemons
⅔ cup lemon juice
4 eggs
1 cup sugar
6 ounces butter, melted


Combine eggs and sugar and stir well. Add zest and juice and stir. Add cooled butter. Heat on low/medium heat until boiling. Strain, cool and enjoy.
