2 red onions, thinly sliced
1 cup white vinegar
3 Tablespoons agave
1-1.5 teaspoons salt
6 whole peppercorns
Heat all ingredients, except onion, to boil. Pour over red onion and let sit for at least 1 hour. Flavor will develop the longer it sits. Store in airtight container or sealed mason jar for up to 2 weeks.
